Really refreshing twist on a mojito that packs a punch

- Muddle mint, simple syrup (brown works best), and a quartered lime in the bottom of a cocktail shaker
- Add the Spiced rum (Sailor Jerry's is my favourite) and ice
- Shake for 10 seconds
- Strain into 2 tumblers filled with ice
- Top up with Fentimans Ginger Beer
- Garnish with lime and mint leaves
- Enjoy
